This “sweet” weekend workshop will be an insider’s tour into the world of Fine Chocolate. A series of guided tastings will carry students from the Xicoatl drinking chocolate of the Central American Olmec people into today’s craft chocolate movement. Along the way, students will roast, crack, winnow, and grind raw cacao beans into some of the best chocolate you will have ever tasted. By the end of this workshop students will know what chocolate is and how it’s made, along with the “real” differences between dark, milk, and white chocolate. Richard encourages MASW students to come and gain an understanding of the history of chocolate, and how that history impacts what you actually taste.
