Seafood & Sauces: The Art of Prepping, Pairing & Plating with Chef Joe Miller September 24-25, 2022
This class is for all the seafood lovers out there who want to become more confident in preparing, cooking, and serving fresh seafood. The class will cover how to properly prepare, clean, and cook a variety of fish and shellfish. There will be discussions, demonstrations, and hands-on experiences, including tasting the dishes that they create with Chef Joe. Participants will have the opportunity to work with many types of fresh fish and shellfish such as salmon, scallops, oysters, shrimp, and more. Students will learn how to properly apply the appropriate cooking techniques to each type of seafood. To complement the seafood, students will learn how to make several classical and contemporary sauces such as beurre blanc, pan sauces, ragouts, and salsas. Finally, students will practice the art of plating their creations. Students will gain the tools to show off their new cooking and plating skills at their next dinner party.
