Building a Brick Oven: Advanced Design & Construction Techniques with Dave Zeltwanger (Tues to Sat) April 19-23, 2022
This hands-on class will be constructing a Pompeii style brick oven for the MASW campus! As a class, students will team build a 48” dome oven; cutting the brick, negotiating the entrance arch and topping the chimney. This oven will be the focal point of the outdoor gazebo area behind the main campus of MASW. David will present the fundamental aspects of brick oven design and students are encouraged to develop their own custom oven specifications over the weeklong course. The class will cover a variety of oven building techniques. Ancient arch construction technology will be demonstrated as the dome oven progresses. Students will participate in the reduction arch installation and learn the principles of the Free Gas Movement Theory. By week’s end the insulating exterior and protective stucco coat will be applied and the vent/chimney completed. Students will have to opportunity to practice stone masonry application while installing Indiana limestone to the oven base. This hands-on class will give students the confidence to build their own outdoor recreational brick oven that can be used for social gatherings for decades to come. PLUS this oven can be used for baking bread, cakes, cookies, pies and of course, pizzas.
